A family-run craft business founded in 1870, Biscuiterie H. Rault has kept alive for six generations the recipe for its cassava biscuit, an iconic Mauritian speciality listed as national heritage.

Did you know?

It all began when Hilarion Rault, son of a Breton settler nostalgic for the galettes of his childhood, tried to recreate that flavour using cassava, since wheat was unavailable on the island. The production process has barely changed in more than 150 years: weighing on an 1869 scale, artisan baking, and a century-old hydraulic pump — the only one of its kind ever invented by the Montgolfier brothers — drawing the water it needs from the nearby river. More than 15,000 biscuits still come out of this factory every day, in seven different flavours.
